The
study
was
designed
to
distinguish
if
demographic
information
has any
bearing
on the
amount
of
food
consumed
during
a
lunch
period
.
Gender
,
ethnicity
,
lunch
status
were
three
demographics
compared
to the
amount
of
food
consumed
that was
provided
at
lunch
. A
Food
Intake
Survey
was
administered
at
three
urban
schools
(N=2553)
in
New
Britain
,
Ct
for
one
day
,
which
consisted
of
all
food
items
provided
from
schools
. A
Chi
Square
method
and
descriptive
statistics
was
used
with the
statistical
breakdown
of
results
.
Most
of
studies
have
followed
a
students
diet
throughout
the
day
via
food
logs
or
journals
.
Students
may
forget
to
place
an
entry
into these
journals
and
skew
the
results
. This
Food
Intake
Survey
validates
the
choices
students
are
offered
to what they
actually
consume
.
We
mostly
assume
students
are
gravitating
to
unsound
choices
and are not
meeting
standards
by the
United
States
Department
of
Agriculture
. The
Food
Intake
Survey
(N=1045
valid)
results
were
placed
into
three
categories
(25%
,
50%
,
75%)
based
on the
consumption
of
food
eaten
. The
students
demographics
were then
compared
to the
percentage
of
food
consumed
which
was
given
to them. The
data
was not
analyzed
with a
crossover
comparison
of
each
group
, but
rather
as a
separate
entity
.
Urban
middle
school
students
are
consuming
unsound
food
items
during
lunch
periods
during
a
time
when
lifestyle
diseases
have been
attributed
to
diet
and
lack
of
exercise
.
Each
school
district
is
now
accountable
for
improving
their
students
diet
through
a
Wellness
Policy
.
Wellness
Policies
are
mandated
for
each
district
and would be in
violation
of the
No
Child
Left
Behind
Act
.
It
was
concluded
that
students
regardless
of
demographic
integrity
are not
consuming
all
the
food
items
given
to them by
schools
.
Only
50
%
of the
food
were
consumed
regardless
if
it
was
free
,
reduced
or
brought
in from
home
,
ethnicity
or
gender
.
Gender
had a
mean
of
48.1
(male)
and
48.96
(female)
for the
percentage
of
food
consumed
.
Ethnicity
has
similar
means
of
49.4
(African
American)
,
49.28
(Hispanic)
,
47.12
White
, and
45.3
(Other)
.
Lunch
status
had a
wider
spectrum
of
49.7
(Free)
,
47.66
(Reduced)
,
46.8
(Buy)
, and
39.17
(Bring)
. In
conclusion
,
schools
have
made
tremendous
strides
in
improving
dietary
needs
of their
students
.
Some
schools
still
have a
snack
bar
and/or
vending
machines
where
students
are
gravitating
towards
to
get
their
nutrition
. The
questionnaire
proved
even
free
lunch
status
students
were
purchasing
snacks
and
drinks
from
snack
bars
and/or
vending
machines
. There
still
needs
to be
improvement
to
eliminate
all
snack
bars
and
vending
machines
in the
cafeteria
to
terminate
temptation
.
Along
with
more
education
to
students
and their
parents
change
lifestyle
patterns
which
were
learned
. If the
parents
can
become
better
role
models
to their
children
the
rise
in
lifestyle
diseases
could
turn
around
.
Sound
education
and
role
models
may
be the
successful
equation
to a
long
,
healthy
life
.
